Of couse, there's no possible way I could suggest hotels at every embarkation port around the globe, but as I have positive hotels experiences during my travels, I'll pass on the information to you best I can.

Fort Lauderdale/Port Everglades Pier:

Embassy Suites on E17th Ave - these rooms are very spacious including a separate living area for every room. A complimentary breakfast buffet is available every morning and they also have a Manager's Happy Hour on Thursday nights with complimentary wine. If I remember correctly, complimentary high speed wifi is also available. Although this hotel does not have an airport shuttle, it's only 2 miles from the airport, so a taxi ride is very reasonably priced.

Fort Lauderdale Grande Hotel  on E. 17th Ave (is now a Hilton property) - this is the closest hotel to the pier and convention center which is the only reason I'm including it on my 'suggested' list of hotels. The rooms are modern and chic (including a rain-like shower where the water comes straight down from the ceiling) and the hotel is part of a yacht club, so there are boats and yachts all around the property making it very scenic.  A refrigerator is in each room.The biggest drawbacks are that it's pricey compared to neighboring hotels, high-speed internet is $9.95 for every 24 hours (both wireless and non-wireless), there's no hotel shuttle, and the food options are minimal (there are restaurants on the property, but anything off the property is a short distance away). Parking is available, but for a fee of $6 per day.

Holiday Inn Express on W. State Rd 84/SE 24th Ave - this hotel looks and feels very new. The rooms are spacious, and has both complimentary breakfast and complimentary high-speed internet access (non-wireless only... wireless is not available). A refrigerator and microwave is in each room. This hotel also has a complimentary airport shuttle from FLL, and offers shuttle service to/from the Fort Lauderdale/Port Everglades cruise pier for a nominal fee. Parking is available free of charge. Considering it's slightly farter away from the pier compared to the other hotels mentioned, the price is great. Overall, this is a great bargain if you don't mind being a little farther away (by about 2-4 miles).

Other hotels in the general area that I personally have NOT stayed at include the Renaissance Hotel.

 

New Orleans pier:

Royal Sonesta - 300 Bourbon Street - this is a prime location if you want to spend a day or two before or after your New Orleans cruise. On Bourbon Street in the heart of the French Quarter, this beautiful hotel is only a quick taxi ride to the pier (it's walkable, but if you have luggage, I suggest taking a taxi). They also house Irvin Mayfield's Jazz Playhouse, one of the newest and most popular jazz clubs - the music, food, and drinks here will surely complete your New Orleans experience.
